Healthy and Nutritious Strawberry Muffins
When I was pregnant with my 5th child, I decided to start watching the food that I ate so as to only gain the necessary amount of weight. I needed something quick to snack on that would be filling and tasty and I discovered these strawberry protein muffins! This recipe is easy to make with simple ingredients. The only issue I have is that my kids love them too and I have to share them. Ha!

What ingredients do I need to make Strawberry Protein Muffins?
The ingredients to make strawberry protein muffins is pretty simple. You need quick oats, greek yogurt, eggs, honey or maple syrup, baking powder and baking soda, strawberries, vanilla protein powder and a milk. You can choose which kind of milk you want. I use what I have on hand but most of the time it is raw milk. I have used almond milk before as well as water if I’m completely out of any type of milk. You can also add in your own nuts or seeds if you want to add in some healthy fats. This recipe is customizable.

Making Strawberry Protein Muffins
Step 1
Gather all of your ingredients and preheat your oven to 400º. I usually use liners in a cupcake pan but if I don’t have them, I will rub some butter into each cup so that the muffins won’t stick.
Step 2
Place all of your ingredients into a blender or use a hand held mixer to mix all of your ingredients together. Sometimes I will put all of mine into a bowl and use my kitchen aid stand mixer.
Step 3
Put all of your diced strawberries into the batter and fold them in with a spatula.
Step 4
Fill your muffin pan with your batter half to 3/4 of the way full.
Step 5
Top your muffins with seeds, nuts or left over strawberries.
Step 6
Bake your muffins for 17-20 minutes. After removing them from the oven, take the muffins out of the pan and allow them to cool on a cookie rack.

Strawberry Protein Muffins
Ingredients
- 2 1/2 cups quick oats
- 1 cup greek yogurt
- 2 eggs
- 1/4 cup maple syrup or honey
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup strawberries
- 2 scoops vanilla protein powder
- 1/4 cup milk (almond milk, coconut milk or water are fine too)
- *Optional - nuts or seeds to top you muffins
Instructions
- Preheat your oven to 400º F
- Grease your muffin pan cups or line with cupcake liners
- Mix all of your ingredients except for the strawberries and nuts or seeds. Use a blender or mixer to get a pancake batter like consistency.
- Cut up the strawberries and fold them into the batter.
- Fill the muffin pan up to 3/4 full with the batter.
- Put any seeds or nuts on top.
- Bake for 17-20 minutes or until the tops are golden brown
- Remove from the oven and place each muffin on a cookie rack to cool.
