Why Basil roasted sweet potatoes?

Sweet potatoes are a great, healthy option when it comes to carbs. Instead of the traditional baked sweet potato, these basil roasted sweet potatoes will shake things up a bit while keeping your plate clean.

I discovered basil a few years ago and I love to put it on almost everything now!

This recipe only includes four ingredients that you probably already have at home and it really takes your meat and potatoes dish to the next level.

How to make Basil Roasted Sweet Potatoes.

Making basil roasted sweet potatoes is pretty simple. First, cut off the ends of your sweet potatoes. Then chop up the rest of the sweet potatoes into 1/2 inch or 1 inch cubes. You can leave the peeling on if you wish or cut them off. I prefer to leave them on there.

Toss your sweet potatoes into a pan or glass dish so that there is only one level of chopped sweet potatoes.

Once you have them laid out, drizzle the sweet potatoes with olive oil or avocado oil. Avocado oil would be the best option if you have it since it doesn’t break down at high temperatures like olive oil. I would say it takes about 2 tablespoons of oil to drizzle one 9 x 11 pan of chopped sweet potatoes. You want to make sure that each potato has some oil on it.

Once you have finished putting the oil on top of the potatoes, sprinkle chopped basil herb onto the tops of the potatoes. I like for them to be almost completely covered when I’m done sprinkling. I’m guessing it is about a table spoon of basil for one 9 x 11 pan of chopped sweet potatoes.

Sprinkle sea salt on top after the basil. I prefer a lot of sea salt because it brings out the flavor the most. If you like a lot of salt as well, I would suggest about a teaspoon of salt sprinkled on top. You can also wait until the sweet potatoes are fully cooked before adding your salt to taste.

The last thing to do is take a wooden spoon and lightly mix the potatoes and herbs then spread them back out into one layer. I prefer to do this right on the pan or dish so I am not dirtying another dish.

Bake in the oven at 400º F for 30 minutes. I like to stir them half way through just to make sure they cook evenly. After your timer goes off, pull them out and load your plate down with this delicious, savory, salty and sweet meal.

What do I serve them with?

Basil roasted sweet potatoes are a perfect side dish for chicken, pork, beef, fish…well just about any protein out there. I also like to pair it with sautéed zucchini or spaghetti squash to keep my vegetable intake up.

You can also make this into a sweet potato bowl and top it with some shredded chicken and spices or ground beef and broccoli.

The possibilities are really endless. Get creative or just have them as a mid-afternoon snack.

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

  • Organic sweet potato
  • 2 Tbs Organic extra virgin olive oil per large sweet potato
  • 1 Tbs chopped fresh or dried basil
  • Celtic sea salt to taste

1. Preheat your oven to 400º F then start chopping your sweet potato(es) into 1 inch cubes. Leave out the very ends of the potato.

2. Spread out your chopped sweet potatoes onto a baking sheet or glass dish so there is only one level of sweet potatoes.

3. Drizzle your olive oil on top of the sweet potatoes then sprinkle your chopped basil on top. Mix well so that the sweet potatoes are coated well with the olive oil then spread them back out into one layer.

4. Place in oven and bake up to 30 minutes. You should be able to easily stick a fork into the potato if it is finished.

5. Sprinkle with celtic sea salt for added taste and minerals and serve hot.

You can use olive oil, coconut oil or avocado oil for this recipe but I find the flavors of the olive oil and sweet potato go well together.
